I decided to try my hand at one of these fancy breakfast bowls that are all over instagran, and this easy version did not disappoint.
This sweet potato breakfast bowl recipe is from From My Bowl, and if I can do it, you can too. Sweet potatoes are the only thing that requires cooking!

- If you don’t have a full-size food processor for the sweet potatoes, use a small one and process in batches by serving (if you’re making 4 servings, process in 4 batches). Don’t skip this step! It will make the sweet potatoes really soft and puree-like; the consistency should be smoother than mashed potatoes.
- If you’re bringing this meal somewhere, like to work, keep all the ingredients separate until you’re ready to eat.
